Learning Objectives

Indicator: B6.5.3.1.1 - Identify the scientific concepts and principles underlying the operation of some industries

By the end of the lesson, learners can:

  1. State the scientific meaning of at least four key industry terms: fermentation, evaporation, salting-out, and saponification.
  2. Describe the scientific principle behind the production of at least two local industries (kenkey, salt, soap, gari, or cooking oil).
  3. Observe and record at least three activities during a study visit to a local production centre and link each activity to a scientific concept.
  4. Explain in their own words how temperature, time, or mixing affects the quality of a product such as kenkey or soap.
  5. Work in groups to classify the stages of a production process into the scientific principles applied at each stage.

Exemplars (from the NaCCA curriculum)

- Learners watch a video of kenkey and salt production processes.
- Learners go on a study visit to a local business venture such as kenkey, soap, salt production, cooking oil, or gari production centre.
- Learners must observe the activities and interact with people at the workplace.
- Engage learners, in groups, to discuss and identify the key scientific principles underlying the operations of the industries visited.
- Build vocabulary of learners by explaining key terms such as evaporation, salting-out, fermentation and saponification.
Project Give learners a project to work in groups to produce yoghurt, kenkey or soap based on the experiences from their study visits.
