Learning Objectives

Indicator: B9.1.1.1.2 - Observe appropriate food hygiene practices.

By the end of the lesson, learners can:

  1. Explain what food hygiene means in their own words, using at least two examples of conditions that keep food safe.
  2. List at least five appropriate food hygiene practices and state why each one matters.
  3. Differentiate between safe and unsafe food handling behaviours when shown a set of scenarios.
  4. Demonstrate proper handwashing and safe food handling steps during a practical kitchen or classroom session.
  5. Assess a food preparation area and identify at least three hygiene risks, then propose corrective actions.

1. Explain what is meant by food hygiene.
E.g. It is the conditions and measures necessary to ensure the safety of food from production to consumption.
2. Outline the appropriate food hygiene practices.
E.g.
- Wash hands before handling food.
- Do not sneeze or cough near food.
- Do not smoke or eat in any kitchen areas.
- Put clothes/jackets/bags in a separate area away from cooking areas.
3. Watch a video on good food hygiene practices and discuss, in groups.
Note:
- Always clean workshop at close of work and dispose of refuse appropriately.
- Always demonstrate food hygiene practices in school/class and during practical lessons.
